1) Sorsebata Ilish Mach: One of the most tasty dish. This dish has Hilsa in the local five spice mix, coated in a flavourful mustard and poppy seed paste.

 

Ingredients


1) 600 gm hilsa


2) 3 Tbsp mustard oil


3) 2 Tbsp mustard seeds


4) 3 Tbsp poppy seeds


5) 6 green chillies-slit


6) 4 Tbsp ginger paste


7) 1 tomato diced


8) 1 tsp panch phoron


9) 1 tsp red chilli powder


10) 1 tsp turmeric powder


11) Salt to taste

 

Steps :


1) Marinate the fish with adequate salt and turmeric.


2) Soak the mustard and poppy seeds and grind them into a paste.

 


5) Now add turmeric and red chilli powder.


6) Add the marinated fish with green chillies and salt.


7) Add the tomatoes. Mix well and cook on a slow flame.

2) Barishali Ilish: It is a Hilsa preparation and is immensely popular now as part of extended Bengali Cuisine. It is a must make and a must have dish.

 

Ingredients

1) Hilsa Chunks


2) 1 tbps Black Mustard Seed


3) 1 tbps Yellow Mustard Seed


4) 4 tbps Coconut Paste


5) 100g Plain Curd


6) Nigella Seed/ Kalojire/ Kalonji: ½ teaspoon


7) 4 piece of Green Chili


8) Salt


9) 1 teaspoon turmeric Powder


10) ½ teaspoon red Chili Powder


11) 3 tablespoon mustard Oil

 

Steps


1) Marinate Fish Chunks with ½ teaspoon Turmeric Powder and ½ teaspoon Salt.


2) Soak mustard seeds in hot water for 15 minutes.


3) Make a smooth paste of the mustard seeds along with ¼ teaspoon Salt.


4) Strain the paste after diluting it with ¼ cup water to remove the husk.


5) Beat the curd so that there is no lump.

Now Make a mixture of the Mustard paste, coconut Paste, and Curd.


6) Add Salt, Red Chilli Powder, and ½ teaspoon Turmeric Powder and mix.

Add Green Chili slits as well.


7) Heat 2 tablespoon Mustard oil in a pan.


8) Temper the oil with Nigella Seed.

Pour the mixture and add ½ cup Water as well.


9) Once the mixture starts boiling add marinated fish chunks.


10) I have added a fried tail as well.

Cook for around 10 minutes.


11) Turn the fishes once halfway through.


12) Once the gravy reaches desired consistency add 1 tablespoon Oil and cook for 2-3 minutes.

 

Serve it hot with steamed rice.
